Looking for some quick and easy lunchbox recipes now that school is back in session? One way to make sure the kids get healthier lunches that include all the food groups is to stretch those healthy dinners into their lunchbox the next day. The great thing about this is that when you plan to use those lunchbox recipes for dinner the night before you do two things at the same time. Since I don’t know any mother who sits around saying she has tons of free time on her hands, I am betting you and plenty of moms and dads out there would love to use this lunchbox recipe to make dinner and lunch for everyone a snap.
Lunchbox Recipes – Easy Peasie Quesadillas
This only takes about 15 minutes to make and even less to cook! Perfect for that rushed evening meal combined with ready to go lunches. You will need:
1.5 cups grated jack cheese
4 whole wheat tortillas, 8-inch size
1 cup raw sweet potatoes, grated
.5 cup cooked black beans
4 tablespoons mild taco sauce
Grab a tortilla and sprinkle it first with some of the cheese and then some of the grated sweet potato.
Add in a bit of the black beans and some of the taco sauce.
Top the whole thing with a bit more cheese, just enough to cover it lightly.
Then top it off with another tortilla.
Put this in a large frying pan with a bit of the olive oil, letting it lightly cook for a few minutes, then flip and do the same on the other side. Both sides should be lightly brown and a bit crispy.
Flip to your cutting board to cool and then cut up for yummy snacks at dinner or in the lunchbox tomorrow. A couple of these with a salad and dressing on the side should make a healthy appetizer for dinner as well as a great lunch for tomorrow.
