Mini Meals Your Kids Will Love


If you have a picky child on your hands, mini meals are a perfect meal to make for them. Not only are these little meals fun to make, they’re also packed with delicious ingredients making them a perfect meal for everyone in your family. Here are five mini-meals you can make any day this week.

Mini Calzones. Using a biscuit cutter, cut rounds of pre-packaged pizza dough and place them inside of each muffin well. Add your children’s favorite vegetables and place another round of dough on the top. Next, brush the top of the dough with a coating of organic butter and sprinkle with parmesan cheese. Lastly, bake on the bottom rack at 400°F for 20 minutes.

Chicken Pot Pies. To make this for kids, prepare boxed pancake mix as directed. Take thawed a thawed veggie assortment, shredded cheddar cheese, and shredded rotisserie chicken in the wells of a muffin pan. Fill each well with pancake mix, and bake at 375°F for 30 minutes.

Teeny Tiny Lasagna. With this recipe, line each muffin well with wonton wrappers. Next, spread a thin layer of store bought marinara or homemade marinara onto the noodles and then sprinkle mozzarella and parmesan cheese to the top. You’ll then want to add another layer of noodles until the well is almost full. Top with cheese and bake at 375°F for 20 minutes.

Crazy-Good Chili and Cheese Pies. Mix up a batter of cornbread and add 2 heaping Tbsp of cornbread to each muffin well of a muffin pan. Divide the mixture into 12oz of chili among each of the wells. Bake at 350°F for 20 minutes, and then top with cheese.

Itty-Bitty Broccoli Casseroles. You first will want to combine two cups of dry pasta, 1 1/3 cups of chopped broccoli, 1 egg, 2 Tbsp of mozzarella cheese, 1 tsp of parmesan cheese, and 1/4 tsp of garlic salt. Next, fill the wells with the mixture and distribute 1 cup of heavy cream among each of the wells and top with bread crumbs. Bake the mixture at 350°F for 20 minutes.
